Adam Stocker is Group Head Chef at Rockwater, heading up the kitchen teams in both their Branksome and Hove sites, with another site soon to come to Sandbanks later this year. The
group have created a vibrant lifestyle and dining concept at their beachside locations, offering both family dining as well as a more refined fish and seafood led restaurant, which includes some of the best ingredients sourced from local waters, local growers and British meats, all under one roof.
Adam trained on the renowned Specialised Chefs course at Bournemouth and Poole College, and took an apprenticeship at Langans Brasserie, Mayfair when he was 16. After completion of the 3 year course, he moved to the kitchens of Claridges and Novelli restaurants, before heading back to his hometown of Bournemouth, where he was Head Chef at Harbour Heights Hotel, Sandbanks. He joined the opening team at Captains Club Hotel in 2006 where he stayed for 6 years, before hanging up his apron for a while to discover the fresh produce wholesale world, supplying some of the U.K’s most prestigious kitchens with high quality produce. Always wanting to return to his passion for cooking, Adam returned to the kitchen for the opening of Rockwater in Branksome in 2023.
