>Creamy Rocket Polenta

Serves 4

200g (7oz) quick cook instant Polenta
900mls (1 1/2) pints vegetable stock
150mls (1/4 pint) white wine
110g ( 4oz) rocket
85g (3oz) grated parmesan
Salt and black pepper
A drizzle olive oil

In a large saucepan heat the stock and wine together . Bring to the boil and simmer for 5 minutes. Gradually add the polenta to the pan, stirring continually. Simmer for 1 minute stirring all the time.

Remove the polenta from the heat and stir in the rocket and the grated parmesan cheese. Season well, serve with the spicy sausages .
